If you read my Peanut Butter Cookie Oatmeal recipe, you know I’m nuts about the fusion of peanut butter and banana.
Slap it between bread, bake it into a cake or just give me a banana dipped in peanut buttery goodness, as long as I get to eat it.
It’s not only delicious, but it’s affordable.
I just picked up four HUGE bananas for 70 cents. That is a bargain.
And peanut butter, for the small amount you need to feel satisfied, is always a good investment.
This smoothie is another way I love to start the day.
It’s how I get my almond milk-banana-PB fix during the summer months, when my lack of air conditioning makes the idea of warm, sticky oatmeal a little gross.
I always use unsweetened vanilla almond milk. I find the sweetened flavours to be overly sweet and the plain – just too plain. Vanilla pairs so well with the other flavours.
This smoothie is boosted with ground chia seeds. They are packed full of fibre, protein and those valuable fatty acids that are so hard to find in food. Because they’re ground, you can’t even taste them. It’s just an extra nutrition boost!
To get the perfect consistency, freeze your bananas. I buy them in a big bunch, peel them and pop them into a Ziploc bag for smoothies and baking. If you don’t have any frozen bananas, a few ice cubes will do the trick!

Banana nut smoothie (Vegan)
- One peeled, frozen banana
- 1 tbsp smooth peanut butter (or the nut butter of your choice)
- 1 cup of unsweetened vanilla almond milk
- 1 tsp ground chia seeds
- Throw all of your ingredients into the blender, whip it up until smooth and drink immediately!
